That’s no easy or short answer – but an excellent question.
Before I achieved the balance I have in my life, I was like many people - a little lost and confused when it came to how to be healthy and what it really meant to me.
I was eighteen and fresh out of high school, but I knew that my life would be devoted to good food. School had always been a struggle for me as I have dyslexia and was always in trouble. But, cooking was always something I loved and always had a fantastic, positive outcome with.
Creating delicious meals had been my passion and obsession for as long as I could remember. In fact, I was so certain food and nutrition would be at the centre of my life that I opted to enroll at the Le Cordon Bleu School in London to start my training as a chef before studying nutrition.
I loved every moment of my studies and ‘ate up’ everything they taught me, literally. The one aspect of my studies I did NOT love was gaining about ten kilograms (22 pounds). I was learning to cook Parisian cuisine which, although delicious, was pretty heavy on the cream, cheeses and fatty meats...not to mention very heavy on my tummy, hips and buns!!
What I still didn't know was how to have a fun and balanced life, which I was craving, yet still be able to eat indulgent food without becoming unhealthy, unhappy and guilt ridden. I didn't lack knowledge or drive, but what I did lack was how to put it into a routine which worked for me.
After coming back from living overseas, I embarked on a journey to learn as much as I could about nutrition and food. I wanted to learn how I could successfully combine eating passionately AND eating healthy so I could have the best mental and physical health possible.
Over the last 15 years I've worked with so many people from different walks of life including celebrities, mums, families and busy working people. This has given me invaluable insight into what really works when it comes to being healthy and enjoying food.
